My Healthy Blueberry & Banana Muffins


My Recipe for a healthy alternative to a normal blueberry muffin:

Ingredients

200g Wholemeal Flour
200g Organic Oats
75g Brown Sugar
2tsp Baking Powder
1tbsp Cinnamon
2 Bananas (mashed)
2 Eggs (yolks and whites seperated)
125ml Milk- I use Soy
150g Blueberries

Method

Preheat the oven to 180 degrees celsius.
Combine the flour, oats, sugar, baking powder and cinnamon in a bowl.
Make a well in the centre of the dry ingredients and add mashed bananas and egg yolks and milk.
In another bowl, whisk the egg whites until they form soft peaks.
Pour egg whites into the mixture and slowly fold, then add blueberries.
You should be left with a wet dough-like consistency.
Spoon mixture into muffin cases. (Normally makes around 12)
Bake in the oven for 10-15 minutes until slightly golden brown.
Allow to cool and then serve.


I find these are a little doughier than normal muffins as they don't contain butter or white flour but they are delicious, and a great option for a quick and easy breakfast. Just make a batch on Sunday and they will keep until around Wednesday!
